Goblet of Franciacorta Brut wine with:

  • Pinto bean cream with musky octopus, 
  • Duck breast salad with celeriac and pomegranate, 
  • Goat cheese mousse with dates and curry pastry

FRANCIACORTA BRUT - Ferghettina



  • Sicily red prawns carpaccio with sprigs of burrata cheese, cherry tomatoes confits, candied lemon and sprout salad
  • Cube of tongue with foie gras sauce, velvet potato puree and calendula flowers 

BRUT CHAMPAGNE – Duménil



  • Cuttlefish agnolotti with squid ink, pea cream and powder of bacon
  • Carnaroli rice creamed with boudin black pudding, Bosses pork fat and Bleu d’Aoste cheese mousse 

GAMAY – Maison Agricole D&D



  • Roast rabbit with Gressan potatoes, chestnuts, apple puree, green beans and spices

BOLGHERI ROSSO - Grattamacco

 

  • Yoghurt mousse with pistachio nuts and mandarin gel 
  • Hazelnut pie with persimmon puree

MOSCATO D’ASTI – Saracco

 

  • …and to conclude, after midnight: lentils and pig’s trotter with Lambrusco Corte Manzini Modena

 

The price of the dinner is € 150, beverage and transport via snowmobile included.
