“Aosta Valley flavours”

 

Menu:

  • Crunchy Savoy cabbage salad with mocetta and dried fruit 
  • Stone-ground polenta with egg, black pudding and Fontina cheese mousse

  • Carnaroli rice with alpine toma cheese and Fénis hazelnuts

  • Morsels of roe deer venison, purple potato purée and chanterelle mushrooms

  • Apple fritters with homemade cinnamon ice-cream

  • Coffee 4810

  • Welcome aperitif with sparkling wine and finger-food

  • Seared Fassone beef, roasted Jerusalem artichokes and anchovy sauce

  • Broccoli pudding, Aosta Valley fondue and crumbs of Taggiasca olives

  • Beans and mussels soup with basil small pasta

  • Roasted quail, cardoons in beurre noisette and foie gras sauce

  • Russet apple cake with rosemary and crème anglaise

  • Coffee 4810 served with our homemade pastries

  • Duck carpaccio with mulberry sauce, fennel salad and goat cheese

  • Creamed corn with capers, anchovies and olives, coffee powder, brown bottom

  • Carnaroli rice with rabbit liver and sour stewed onions

  • Salmon fillet, chickpeas and tomato confit

  • Chestnut and chocolate millefeuille on 4810 cream

  • Coffee served with our homemade pastries
